Chicken Pot Pie
1/2 # Pork sausage
1/4 C Margarine;
1/2 C Flour;
1/4 t Salt;
1/8 tsp Pepper;
2/3 Cup Milk
14 1/2 can chicken broth
2 Cup Chopped Chicken or Turkey
10 oz Frozen peas/carrots - thawed
Brown sausage - drain.
Melt butter, stir in flour, salt, pepper.
Add broth and milk
Stir in chicken and veggies
Place mixture in pastry casserole, cover w/ 2nd crust.
Bake 450; 25 - 30 min.
If you are a pie crust illiterate, like us, we recommend Pillsbury refrigerator crust.

JP's Chocolate Goop - CORRECTED
1 cup all purpose flour, sifted 1/2 cup milk
1/4 teaspoon salt 1/3 cup melted butter
3 tablespoons baking cocoa 1 cup chopped nuts (opt)
2 teaspoons baking powder 1/2 cup packed brown sugar
3/4 cup sugar 1/2 cup sugar
1-1/2 teaspoon vanilla ext. 4 tablespoons baking cocoa
1-1/4 cup hot water
Combine FLOUR, SALT, BAKING POWDER, 3 TBS COCOA and 3/4 C SUGAR in bowl. Add vanilla, milk and butter; mix well. Stir in nuts (optional). Pour into buttered 9x9 inch casserole (doubled use 9x13). Mix together remaining sugar, brown sugar and cocoa and sprinkle over batter. Pour hot water over mixture gradually in circular pattern. Do not stir. Bake at 350 degrees for 45 minutes. Serve warm with whipping cream.

Wings - CORRECTED
Long Wongs chicken wings have been the "Best of Phoenix" wings forever. When we moved to Missouri, I wrote and asked for the recipe, and did not receive an answer. We went back for a visit, went to Long Wongs and told the waiter the story of trying to get the recipe. He commiserated but said he could be fired for giving it out. Oh well...then our sweet baby girl dumped over a 20 oz drink on our table, he was busy so I cleaned it all up. In appreciation he said one word, "Franks". COOL!! We ran to the nearest grocery store and bought up their supply, just in case we couldn't get it in Houston, MO. The recipe was on the bottle. Here ya go...
2-1/2 POUNDS chicken wing pieces
1/2 cup Frank's original sauce
1/3 cup melted butter
Deep Fry 12 minutes at 400 degrees
Combine sauce and melted butter in bowl w/cover
Shake wings a few at a time in bowl.
Serve immediately with preferred dip
Can be kept warm in oven if necessary; but not as good.
Throw a big bunch of these with some potato skins and a veggie tray and you have one happy gaggle of cheerleaders!!!
Flan
6 eggs
2/3 cup sugar
2 cups milk
1 tsp vanilla
Preheat over to 350 degrees.
Fill a 9 x 13" pan with water to come halfway up sides of 6 custard dishes or flan pan. Place pan of water in oven while preparing custard. Beat eggs with 1/3 cup of the sugar; add milk and vanilla. Set aside. Melt the remaining 1/3 cup sugar in a small, heavy skillet over moderate heat. Stir continuously until just melted. Working quickly, immediately pour caramelized sugar into custard cups or flan pan. Top with custard. Carefully place in water and bake 25 minutes. Remove from hot water and chill at once. When cold, invert onto serving plate. Custard will slip out and caramel sauce will flow over it. Serves 6
Asian Flank Steak - CORRECTED
1/4 cup soy sauce
1/4 cup worchestershire
2 TBS fresh lemon juice
1 TBS minced ginger
2 TBS Cilantro
1 - 2 lb. flank steak
Whisk first 5 ingredients and put in a zip lock bag. Add meat and marinate over night.
Drain off and reserve marinade. Grill meat 5 - 8 minutes per side.
Boil the marinade for 5 minutes to reduce for sauce.
Let meat stand 5 minutes, slice across grain, and serve with sauce.
Serve with: Chinese Vermicelli
1/2 - 1 package angel hair pasta or spaghetti
2 TBS salad oil
2 TBS sesame oil
1/4 cup tamari sauce
2 TBS balsamac vinegar
2 TBS sugar
1 TBS (or less) hot chili oil
1/4 - 1/2 cup sesame seeds
Fresh cilantro
Cook pasta according to directions; mix together oils, tamari, vinegar, sugar and chili oil, and pour over hot pasta. Sprinkle with sesame seeds and garish with cilantro.
Zucchini Pie - CORRECTED
4 cups thinly sliced, unpeeled zucchini
1 cup coarsely chopped onion
1/4 cups margarine or butter
1/2 cup chopped parsley, or 2 TBS parsley flakes
1/2 tsp salt, 1/2 tsp black pepper, 1/4 tsp garlic powder, 1/4 tsp sweet basil leaves
1/4 tsp oregano leaves
2 eggs well beaten
2 cups shredded muenster or mozzarella cheese
pie crust
2 tsp prepared mustard
Heat oven to 375. In skillet cook zucchini & onions in margarine until tender. Stir in parsley and seasonings. In large bowl blend eggs & cheese. Stir in vegetable mix.
Spread crust with mustard. Pour mixture into crust. Bake at 375 for 18 - 20 minutes or until knife inserted comes out clean. Let stand 10 minutes before serving. Cut into wedges and serve hot.
