Introduction
after the week of thanksgiving i feel as though some lighter dishes should be served for dinner, here's what i came up with this week

Veggie Soup
literally every veggie i had in the fridge went into this soup, along with some black beans, whole wheat pasta and fire roasted tomatoes....mmmmm

Rainbow trout with smashed new potatoes and roasted asparagus
The potatoes might not be the lightest dish, but boil them for 20 minutes, smash them up with the skin on (still chunky in consistancy) add a couple tbls. butter, salt pepper and all the herbs you want. I used dill parsley and chives. scrumptious

Hummus pita pizza
Pita bread, spread hummus on top. add your toppings, i used red pepper, artichoke hearts, and kalamata olives. (ground lamb and feta is tasty on these as well) put in the oven at 400-425 for about 10 minutes. Finish with parsley and a squeeze of lemon

Chicken with capers and mushrooms with wild rice

Sweet and Sour turkey meatballs, with steamed edamame
