Introduction
My heart was all aflutter this weekend.
Daughter #2 came home for the weekend.
So, Saturday, we celebrated the niece's birthday, and the next day, I cooked Sunday dinner. We called the grandparents as they are ready volunteers and easy victims.
I prepared one of my easiest and most favorite regional comfort foods -
Chicken and dumplings.
I wanted to share the recipe.

Chicken and Dumplings
Quick, easy, yummy.

Ingredients: Chicken carcess

May have been boiled, baked, electrocuted, gassed, and grilled. (Refer to above list - Chicken Recipe From Hell)
Put in pot with a couple of inches water.

Add chopped onion.
Cover and boil until meat falls off bone and a rich stock is formed.
Cool and remove skin, bones and skim off fat.

Add can of cream of mushroom soup

Cover and boil until carrots are done.

Make dumplings
Mix 2 cups flour with 4 teaspoons baking powder, 1/2 t. salt (?)
Stir in 1/4 cup olive oil and 1 cup milk
(better if you use buttermilk and add an additional 1/2 t. baking soda)

Drop spoonfuls of dough into boiling chicken stew.
Cover and Cook 15 minutes.

Serve with a salad.

Follow with dessert.
Saturday was my niece's birthday. Birthday cake always makes a nice dessert.

Ummm...was there a problem with the cake? I've eaten cake at your house and haven't had to lick it off of the floor.

LOL :D MMMM...the chicken and dumplings look delicious, and I'll have some salad too. Maybe you could give my piece of cake to the raccoons though. I'll probably be too full for dessert. Sure wish I could dance like that! HA HA HA Sounds like you had a great time, Kathybelle. Happy Birthday to your niece.
